Cleaner Production. Dried Apple Vitamin Bars

The cleaner production approach is the best known of proactive environmental strategies. The RTU Environment protection and Heating Systems Institute teaches the basics of cleaner production as a part of its environmental technologies course. This article describes a methodology used to teach cleaner production principles and a case study of their application in the food industry (production of dried fruit vitamin bars), highlighting the importance of the use of local resources.
