Paper presents results of fresh hide structure investigation when the hide is stored under vacuum at low temperature. The investigation was carried out using optical microscopy, infra red spectroscopy and differential scanning calorimetry. It was established that in the hide during 22 days of the vacuum storage any serious structural changes, which can influence a quality of leather produced from such hide, do not occur. Negligible changes in the IR spectrum and in DSC curves of the hide samples stored three weeks can be explained by pressing of hide tissue and closing of collagen fibres.
