Anotācija Grey alder (Alnus incana (L) Moench) wood, due the ability of its smoke to produce excellent flavour, taste and antioxidant properties, is the main raw material employed in smoking of meat and fish in the North European countries around the Baltic Sea and Russia. Unfortunately, grey alder smoke contains higher concentrations of polycyclic aromatic hydrocarbons (PAH), especially benzo(a)pyrene (B(a)P) then other wood species used for smoke generation. Therefore, our studies were aimed at elucidating the impact of summary extractives and wood storage time on the composition of the volatiles obtained during the thermal decomposition of grey alder wood.
